Ingredients: Beef Brisket – 12 to 15 pounds (Packer Cut) Kosher Salt Coarse Ground Black Pepper Vegetable  Oil Aluminium  Foil – Heavy Duty Hickory, Pecan, Oak or Mesquite chunks/logs Charcoal (optional)   Equipment: Smoker Meat Thermometer   Method: 1.)
